8 chicken breast, diced into 1" cubes
cooking oil
cajun seasoning
3 onions diced
4 cans chicken stock
1 cup of dark roux
3 cans cheap biscuits
Brown chicken in small amount of oil. Add onions and saute'
until clear. Add stock and roux. Cook for about one hour.
Cut biscuits in half and add to pot. Cook for 30-45 minutes stirring ocassionally
and pushing biscuits down to bottom of pot.
Serve over cooked rice.
Makes about 8 quarts.
